BAKER's CHOICE MENU
All the breads are, as always, wholemeal & sourdough.
Jan 27 - Rugbrod: a tinned 100% rye bread with sunflower and flax. Recipe from Thomas Teffri-Chambeland.
Feb 3 - Gingerbread Rye: dark, spicy and sweet. This loaf uses spice cake scraps, which means it contains, among other things, eggs, oil, and sugar.
Feb 10 - Ring Rye: round, flat, and sour. 100% rye. A perfect traveling loaf, no knife needed.
Feb 17 - Apple Rye: tinned wheat & rye bread made with last fall's apple (and maybe some pear and quince) sauce.
Feb 24 - Miche: inspired by the memory of a loaf at L'Imprimerie in Brooklyn. A country bread made with wholemeal wheat, rye, buckwheat, & corn.
Mar 3 - Alpine Spice Rye: tinned 100% rye with Brotgewürz (caraway, coriander, anise, fennel, blue fenugreek).
Mar 10 - Smoky Vollkornbrot: your market favorite. 100% rye, sunflower seeds, smoked red rye malt.
Mar 17 - Root Cellar Rye: to celebrate the official end of winter, a true peasant bread. Rye & wheat and the last ugly root vegetables from the farm.
Mar 24 - Honey & Spice: a lovely, comfortable recipe from Dawn Woodward. 100% rye, honey, raisins, and warming spices.
Mar 31 - Westphalian Pumpernickel: a basic 100% rye bread baked low and slow for 24 hours makes a loaf that's anything but simple. This bread is culinary magic.
