Where does our food come from, and why?

Our goal is to make food that's good for you, the eaters, and for the workers and lands that produce it. In an economic system built on the exploitation of land, labor, and natural resources, this is an impossible ambition, but one we're committed to working towards. Right now, this means building relationships with local producers where we can and finding short, transparent supply chains where we can't. The results are imperfect but improving. 75% of our ingredients, by weight, are grown in Washington and most of the remaining 25% are processed here.

CHOCOLATE: Organic, direct trade from K'ul Chocolate (Whatcom)
EGGS: pastured from Sky Valley Family Farm (Snohomish)
FLOUR + GRAINS: Organic from Cairnspring Mills (Skagit), Chimacum Valley Grainery (Jefferson), Camas Country Mill (OR)
FRUITS + VEG: Organically grown if not always certified from Whatcom & Skagit farmers and our neighborhood gleanings
HERBS: from the back garden
NUTS: from Holmquist Hazelnuts (Whatcom)
SALT: commodity, because sourcing ethical bulk salt has thus far eluded us
SEEDS & SWEETENERS: from the worker owned cooperative Hummingbird Wholesale, a business as thoughtful in their farm contracting and sourcing as our bakery (OR)
SPICES: Organic and/or direct trade from Singing Dog Vanilla, Red Ape Cinnamon, Frontier Spice Co
